From small-scale fishing to magrebin and mediterranean cuisine
As part of the Slow Fish campaign, the first edition of the event “From small-scale fishing to magrebin and mediterranean cuisine”, organized by Slow Food and the Club Bleu Artisanal Association, was held on Saturday 7 April in the old port of Bizerte. The event was organized with the support of the Higher Institute of Fishing and Aquaculture of Bizerte, Tunisian association of professionals of the culinary arts and the NEMO project, financed by the Italian Ministry of Foreign Affairs.
Professionals in the gastronomic and artisanal fishing sector from Egypt, Italy, Morocco and Tunisia met to discuss the principles of responsible fishing and Mediterranean cuisine, to share experiences, knowledge and practices with consumers, to promote, through tasting sessions , the consumption of local fish and alien species.
There were several issues addressed during the event: the responsible gastronomy, as a system to support, reinforce and safeguard fishing techniques and traditional knowledge, typical of the Mediterranean area, the over-exploitation related to industrial fishing , the consumption of alien species that have invaded the Mediterranean in recent decades and the role of women in the development processes of Mediterranean coastal territories.
