NEMO WEBINAR | The artisan transformation of the tuna – Tutorial
On Wednesday 11 April 2018, the online meeting between the coastal communities of the Mediterranean was held. These seminars are organized within the NEMO program, financed by the Directorate General for Development Cooperation of the Ministry of Foreign Affairs and International Cooperation and the Italian Development Cooperation Agency and implemented by Ciheam – Bari.
The Webinar reunited the coastal communities of Italy, Albania, Algeria, Egypt, Lebanon, Morocco and Tunisia.
The Gastronome Experts of the Harbor of Taste of the Portico Museum of Tricase have illustrated the recipe of the oil, one of the traditional systems of conservation of the fish.
Thanks to the presence of dr. Massimiliano Sticchi and dr. Tony Forte, experts in food safety,
it has been possible to pay particular attention to the sanitary practices useful to guarantee the safe consumption of the product.
